This is a popular natural yeast bread shop headquartered in Sayama-city, Saitama Prefecture. Following Setagaya Kamimachi, the Soshigaya Okura location opened in September 2019. Our bread, made with domestically produced flour and Hoshino natural yeast that has been fermented gradually (*) has a gentle flavor, enjoyed by young and old.
* Hoshino natural yeast is a type of bread using yeast cultured in rice from Japanese Koji, water, domesticallyt grown rice, and domestic wheat through traditional Japanese brewing technologies. The resulting flavor is less sour and brings out the natural sweetness of wheat.

Approximately 80 types of bread are available, from classic sweet breads and table breads, to fancy nut breads, western confections, such as cream puffs and tarts, to seasonal selections. Our “Earth Umami Bread”, aged for 3 days using carefully selected ingredients, won the 2019 Bakery Japan Cup Bread category. The availability of the best breads in Japan (two loaves, 1080 yen tax included) is limited to just 24 loaves per day. Pre-orders can be made at stores
